The 7 January Bread Company, tucked in an alley behind the Royal Palace, is named after the day the Vietnamese invaded Cambodia, driving the Khmer Rouge from power. For 27 years, the factory has churned out thousands of loaves of French-style bread daily. French colonialists brought bread to Cambodia, but the Cambodians have incorporated it into their diet on their own terms. While rice remains Cambodia's staple food, bread is common fare in cities and towns.
